Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating on the patio area. Fuego’s stunning open-air views and expansive patio seating include the Pacific Ocean, Long Beach skyline and Queen Mary.
Below is some important information to be aware of before you arrive:
- Proper Attire is Required - Must wear shoes, shirts, no bathing suits or see-through cover-ups
- Special requests for specific seating or tables both indoor and outdoor is not guaranteed
- Table times are limited to a maximum of 2 hours
- Cashless transactions are preferred
- Hours of operation and menu subject to change without notice
- Reservations in advance are preferred and can be secured on OpenTable for up to parties of 8

Meet our Executive Chef Victor Juarez
Executive Chef Victor Juarez brings more than 30 years of culinary expertise to Hotel Maya’s Fuego Restaurant. The native Salvadorian has garnered countless culinary awards including AAA’s “Four Diamond” award and a trio of honors from the Southern California Restaurant Writers Association along with the “Golden Sceptre” award in the American category. Executive Chef Juarez also had the rare honor of being chosen to participate in a dinner event at the James Beard Foundation in New York City.
