Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge at Hotel Maya, offers a unique setting at the water’s edge featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio, along with a separate, private dining cabana area. Famous for its handcrafted margaritas, Fuego also boasts one of the largest tequila selections in the region. Fuego’s stunning open-air views include the Pacific Ocean, Long Beach skyline and the Queen Mary.

Welcome Back to Our Guests 

Fuego Restaurant and Bar is open on a daily basis for Outdoor Dining or Take-Out only.  Fuego provides a one of a kind waterfront patio dining experience with extraordinary food and beverage and spectacular views.  Current Menus and Hours of Operation are available online or via QR Code upon arrival.  

We have missed you and there are a few important things to note as we welcome you back safely and follow all mandated state and local guidelines:

  • Currently our outdoor seating capacities are limited to allow for maximum physical distancing of at least 6 feet between tables and special requests for specific seating is not guaranteed
  • Guests are required to wear face coverings at all times, except when seated at table 
  • Table times are limited to a maximum of 1 hour 45 minutes
  • Reservations are limited to a maximum of 6 people per table and multiple table reservations for larger parties are not permitted
  • Tables may not be combined and/or moved to increase party size above 6
  • All members of the party must be present before seating and host must bring entire party to the table at one time
  • Do not enter the restaurant if you are experiencing symptoms of respiratory illness, including cough, fever or shortness of breath
  • Staff members are screened prior to beginning their shift for COVID-19 symptoms
  • Our staff is well informed and understands the importance of frequent proper hand washing and personal hygiene
  • We have implemented Hilton CleanStay throughout the property. The Hilton CleanStay program is a new standard of cleanliness and disinfecting that uses hospital grade Lysol cleaning products
  • Guests waiting for seating or to pick-up orders may not congregate inside. You will be required to wait outside separated by 6 feet or more or remain in cars and will receive a text when table or order is ready
  • Guests are prohibited from purchasing and consuming beverages while standing in the facility
  • Guests may not order and drink and stand at the bar
  • Guests must purchase food in order to purchase alcoholic beverages
  • Guests are not allowed to order and pick up drinks at the bar and transport them to their tables.  Any drinks ordered will be served at a table by wait staff or bartender
  • Cashless transactions are preferred
  • No outside food or beverage including bottles of wine
  • Hours of operation and menu subject to change without notice
  • Reservations are required in advance

Meet our Executive Chef Victor Juarez

Executive Chef Victor Juarez brings more than 30 years of culinary expertise to Hotel Maya’s Fuego Restaurant. The native Salvadorian has garnered countless culinary awards including AAA’s “Four Diamond” award and a trio of honors from the Southern California Restaurant Writers Association along with the “Golden Sceptre” award in the American category. Executive Chef Juarez also had the rare honor of being chosen to participate in a dinner event at the James Beard Foundation in New York City.
